Garlic Braised Kale with Sun Dried Tomatoes Recipe

I just got finished saying how absolutely amazing kale was for you, but kale is bitter you say, it's difficult to get the family to eat it, yuck is what you hear from your children. Well with this garlic braised kale recipe everyone is your family, including you will love kale!

Garlic Braised Kale
2 T olive oil
5 cloves of garlic, cut in half, smashed and peeled.
2T finely chopped, pre-soaked sun dried tomatoes.
7 oz. washed and de-stemmed kale cut roughly into 1" chunks (about 1/2 a large bunch)
1/2 t salt
1/2 c. vegetable broth
1 oz. goat cheese.
Heat oil in a large pan. Add garlic and saute stirring until brown, 2-3 minutes. Add tomatoes and combine. Add kale tossing to coat it well with oil. Season with salt and pepper. Continue stirring till kale is wilted. Add broth, bring to boil, reduce and simmer, cover and cook 8 minutes. Uncover turn heat to high to boil away excess liquid stirring frequently. Top with chunks of goat cheese.
