I just got finished saying how absolutely amazing kale was for you, but kale is bitter you say, it's difficult to get the family to eat it, yuck is what you hear from your children. Well with this garlic braised kale recipe everyone is your family, including you will love kale!

Garlic Braised Kale
2 T olive oil
5 cloves of garlic, cut in half, smashed and peeled.
2T finely chopped, pre-soaked sun dried tomatoes.
7 oz. washed and de-stemmed kale cut roughly into 1" chunks (about 1/2 a large bunch)
1/2 t salt
1/2 c. vegetable broth
1 oz. goat cheese.
Heat oil in a large pan. Add garlic and saute stirring until brown, 2-3 minutes. Add tomatoes and combine. Add kale tossing to coat it well with oil. Season with salt and pepper. Continue stirring till kale is wilted. Add broth, bring to boil, reduce and simmer, cover and cook 8 minutes. Uncover turn heat to high to boil away excess liquid stirring frequently. Eat Your Greens.

Greens from the Brassica Family include cabbage, collards,Brussel sprouts and kale all have the amazing sulfur containing phyto-nutrients. Kale in particular has over 10 glusocinaolates which appear to lessen the occurrence of a wide variety of cancers, including breast, colon and ovarian. Though not fully understood, kale and other greens seem to to trigger the body's own detoxification enzymes thus helping to clear potentially carcinogenic substances more quickly. Studies shown that diets rich in cruciferous vegetables such as kale, are associated with a lower incidence of a variety of cancers. High in vitamins K, A, C along with manganese, dietary fiber, calcium and loads of other great things for your body, a cup of kale has only 36 calories.
So go ahead and eat your greens, your kale green that is....

Next up, a great and delicious kale recipe that everyone will love.

Melatonin

Melatonin is a hormone produced in the pineal gland in humans and regulates the circadian cycle. The production of melatonin is inhibited by light and is secreted with the absence of light. When melatonin is produced it regulates sleep patterns. As we get older it has been thought that we produce less melatonin and therefore have a more erratic sleep pattern.
Melatonin that you find in the health food store is often synthesized from plants and is basically non-toxic. I've taken melatonin for years and have found it especially useful against the dreaded jet lag.

Dandelion

My husband came home with dandelion greens to add to the salad the other night. "Pissenlit" he said, what a apt name!
Dandelion leaves and especially the root are an effective diuretic. Small amounts added to a salad or cooked with butter and salt
are fine but much more and pissenlit!! Which translates to pee on the bed!
Dandelion leaves are high in vitamin A, C and iron so go ahead and give it a try, but just a bit.
