The results of tests conducted forMother Earth News magazine's October/November issue show that true free-range eggs are shown to contain significantly less cholesterol , one third less ,and one fourth less saturated fat than commercially produced eggs!


Furthermore eggs from hens raised on pasture(free-range) may contain:
1/3 less cholesterol
1/4 less saturated fat
2/3 more vitamin A
2 times more omega-3 fatty acids
3 times more vitamin E
7 times more beta carotene.

Eat your vegetables and prevent cancer?

According to WHFoods.com "Human population as well as animal studies consistently show that diets high in cruciferous vegetables, such as Brussel sprouts, broccoli, kale, cabbage and cauliflower, are associated with lower incidence of certain cancers, including lung, colon, breast and ovarian cancer. Now, research published in the International Journal of Cancer (Zhao H, Lin J) suggests that bladder cancer can join the list." And there's more "in a study of over 1,000 men conducted at the Fred Hutchinson Cancer Research Center in Seattle, WA, those eating 28 servings of vegetables a week had a 35% lower risk of prostate cancer, but those consuming just 3 or more servings of cruciferous vegetables each week had a 44% lower prostate cancer risk." How much do we need to eat to get these benefits, just 3-4 servings of cruciferous vegetables a week. Not too bad.

Fountain of Youth

I once knew a 80 year old woman who could still climb her apple tree to pick apples and spent a lot of time sewing neck pillows for the "old people" at her church as she put it. She was small, about 4'9" and had a handshake that was like line backer and when she gave you a hug, it was more of a squeeze. I asked her how she stayed so strong and she told me that every day she drank a mixture of apple cider vinegar and water. That was her fountain of youth.

Cancer fighting cruciferous vegetables.

New research has greatly advanced scientists' understanding of just how cruciferous vegetables such as Brussels sprouts, cabbage, cauliflower, broccoli, and kale help prevent cancer. When these vegetables are cut, chewed or digested, a sulfur-containing compound called sinigrin is brought into contact with the enzyme myrosinase, resulting in the release of glucose and breakdown products, including highly reactive compounds called isothiocyanates. Isothiocyanates are not only potent inducers of the liver's Phase II enzymes, which detoxify carcinogens, but research recently conducted at the Institute for Food Research in the U.K. shows one of these compounds, allyl-isothiocyanate, also inhibits mitosis (cell division) and stimulates apoptosis (programmed cell death) in human tumor cells.

Well that was a mouth-full of cruciferous or at least should be.
