A natural occurring phytonutrient found in eggplant skin called nasunin is a potent antioxidant and free radical scavenger that has been shown to protect cell membranes from damage. In animal studies, nasunin has been found to protect the lipids (fats) in brain cell membranes. Cell membranes are almost entirely composed of lipids and are responsible for protecting the cell from free radicals.

Roast whole eggplant in the oven or over a grill-till soft when squeezed. Scoop out flesh and puree with food processor
Add 1 clove chopped garlic, 1/4 cup tahini, 2T lemon juice, 1/4 t salt and 1/4 cup olive oil. Enjoy as a dip or part of a salad.
